Ingredients

- 2 cups flour
- 2 teaspoons baking powder
- ½ teaspoons salt
- ¼ cup canola oil
- 4 ounces unsweetened chocolate, melted and cooled
- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- 1 cup powdered sugar
Preparation
In a medium bowl, combine flour, baking soda and salt.
In the bowl of a stand mixer, combine oil, melted chocolate and sugar. On medium speed, beat in eggs, 1 at a time, making sure each is incorporated before adding the next. Stir in flour, baking soda and salt mixture. Chill several hours or overnight.
Heat oven to 350°F. Drop large teaspoons full of dough into powdered sugar. Roll in sugar and shape into balls. Place a few inches apart on a parchment-lined baking sheet. Bake 10–12 minutes. Make sure not to over bake. The cookies may look slightly underdone when removing them from the oven.
