The traditional vinaigrette is one of the most important flavor makers in the culinary world and an important technique for a home cook to be comfortable with.    The ingredient lists on bottled salad dressings are usually long and unwholesome.   Healthier, less expensive and better tasting options start with a simple ratio; 3 parts healthy fat to 1 part vinegar (or acid).
