- 1¾ cups warm water
- 1 tablespoon active dry yeast
- 4 tablespoons local honey
- 3 cups bread flour
- 1½ cups whole-wheat flour
- 1 tablespoon salt
- 2 tablespoons olive oil plus more for coating dough
Combine water, yeast and honey and set aside. Combine flours and salt in the bowl of a stand mixer. Pour in water mixture and olive oil gradually and mix using a dough hook for 2 to 3 minutes on medium speed. Divide dough into 2 balls, 1 larger than the other (the bottom crust will take about 60% of the dough). Allow dough to rise at room temperature for 1½ to 2 hours before using.
